
ROASTED EGGPLANT QUINOA



INGREDIENTS
- 3 cups cubed eggplant (1/2-inch)
- 2 tablespoons chopped fresh rosemary
- 1 tablespoon chopped garlic
- 1 tablespoon 100% pure olive oil
- 1 cup white quinoa rinsed
- 1/2 cup Culinary Circle Crumbled Goat Cheese
- 1/2 cup roughly chopped smoked flavored almonds
DIRECTIONS
On large foil lined baking sheet, toss together eggplant, rosemary, garlic and oil; salt and pepper to taste. Bake in a preheated 450°F oven until browned and tender; about 12-15 minutes, turning halfway through.
Meanwhile, in medium saucepan, cook quinoa according to package directions; salt to taste.
Stir in goat cheese until creamy. Stir in almonds and eggplant; salt and pepper to taste.
