TORTILLA RANCH CHICKEN TENDERS

INGREDIENTS
  • 1 pound boneless, skinless chicken breasts cut into strips
  • 1/2 cup organic ranch dressing
  • 2 cups finely crushed seasoned yellow corn tortilla chips
  • - 100% extra virgin oil olive no-stick cooking spray

DIRECTIONS

Place chicken and dressing in a 1-gallon recloseable food storage bag; seal. Toss to coat chicken. Refrigerate several hours or overnight, tossing occasionally.

Place tortilla chips in a shallow dish. Remove chicken tenders from dressing, sprinkle with salt and pepper to taste and coat with tortilla chips.

Place on a baking sheet that has been sprayed with cooking spray. Spray top of chicken with additional cooking spray.

Bake in a preheated 425°F oven 12-14 minutes or until internal temperature reaches 170°F.
