
SIMPLE CHICKEN CORDON BLEU FOR ONE



INGREDIENTS
- 1 4 ounce boneless, skinless chicken breasts
- 1 slice Swiss cheese
- 1 slice nitrate free smoked ham
- - toothpicks
- 1 teaspoon organic extra virgin olive oil
DIRECTIONS
Pound chicken breast to ¼-inch thick. Top with cheese and ham; roll up. Secure with toothpicks. Salt and pepper to taste.
In small skillet with lid, heat oil over medium-high heat. Add chicken and brown on all sides.
Add 2 tablespoons water to skillet and quickly cover with lid. Reduce heat and simmer until internal temperature of chicken reaches 170°F on an instant read thermometer.
