
BROCCOLI & CHEESE STUFFED CHICKEN



INGREDIENTS
- 3/4 cup frozen chopped broccoli thawed
- 1 3/4 cups fancy shredded mild Cheddar cheese divided
- 4 (6 ounce) boneless, skinless chicken breasts
- 1 1/2 cups finely crushed wheat snacker crackers
- 1/4 cup creamy ranch dressing
- - cooking spray
DIRECTIONS
In small bowl, combine broccoli and ¾ cup cheese. Cut a slit in the side of each chicken breast creating a pocket. Stuff broccoli mixture into pockets; salt and pepper chicken to taste. Set aside.
In shallow dish, combine crushed crackers and remaining cheese. Brush chicken with ranch dressing and coat with cracker mixture.
Place in a 13x9-inch baking dish that has been sprayed with cooking spray. Generously spray tops of chicken with additional cooking spray.
Bake in a preheated 400°F oven 30 minutes or until internal temperature of chicken reaches 170°F and juices run clear.
