CHICKEN PARMESAN

INGREDIENTS
  • 1 1/2 cups crispy Panko style plain bread crumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 2 1/2 teaspoons organic Italian seasoning divided
  • 1 1/2 teaspoons sea salt divided
  • 1/2 cup organic 100% egg whites
  • 6 4 ounce boneless, skinless chicken breasts pounded 1/2-inch thick
  • 3 tablespoons organic extra virgin olive oil
  • 1 28 ounce can organic crushed tomatoes with basil
  • 1 tablespoon chopped garlic
  • 1 cup organic shredded mozzarella cheese

DIRECTIONS

Combine bread crumbs, Parmesan cheese, 1 teaspoon Italian seasoning and ½ teaspoon salt in a shallow dish. Place egg whites in another shallow dish.

Coat chicken breasts with egg white and then bread crumb mixture. Set aside.

In large skillet, heat oil over medium-high heat. Sauté chicken breasts until browned on both sides (about 3-5 minutes). Transfer chicken to a greased 13x9-inch baking dish; set aside.

In large bowl, combine tomatoes, garlic, remaining Italian seasoning and salt. Pour over chicken. Top with mozzarella cheese.

Bake, covered, in a preheated 350°F oven 35-40 minutes or until chicken reaches an internal temperature of 170°F. Remove cover last 10 minutes of baking.
