ROTINI WITH VEGAN ALFREDO SAUCE

INGREDIENTS
  • 1 12 ounce package organic whole wheat rotini
  • 1 12 ounce package soft tofu
  • 2 cups organic original soymilk
  • 3 tablespoons organic extra virgin olive oil
  • 1/4 cup minced onion
  • 1 tablespoon minced garlic
  • 3 tablespoons unbleached all-purpose flour
  • 1/2 teaspoon freshly ground nutmeg
  • 1/4 teaspoon freshly ground sea salt
  • 1/4 teaspoon freshly ground black pepper

DIRECTIONS

Prepare pasta according to package directions; drain.

Meanwhile, place tofu and soymilk in a food processor or blender; process until smooth; set aside.

In large saucepan, heat oil over medium heat. Add onion and garlic; sauté until softened (about 2-3 minutes).

Whisk in flour; cook 1 minute, whisking constantly. Whisk in tofu mixture, nutmeg, salt and pepper. Bring to a simmer (do not boil); simmer until thickened, whisking frequently.

Toss with rotini.
