BAKED ITALIAN PASTA

INGREDIENTS
  • 1 12 ounce package organic whole wheat rotini
  • 1 1/4 pounds mild or hot Italian sausage links cut into 1/2-inch pieces
  • 1 cup onion chopped
  • 2 teaspoons minced garlic
  • 1 8 ounce package sliced button mushrooms
  • 1 1/2 teaspoons organic Italian seasoning
  • 1/2 teaspoon freshly ground sea salt
  • 1 24 ounce jar organic tomato basil pasta sauce
  • 1 8 ounce package organic shredded mozzarella cheese
  • 1/2 cup fancy shredded Italian style Parmesan cheese
  • 3 tablespoons chopped organic fresh Italian parsley

DIRECTIONS

Prepare pasta according to package directions; drain.

Meanwhile, in large skillet, sauté sausage over medium-high heat until almost cooked through; drain off grease (about 5-7 minutes).

Add in onions, garlic, mushrooms, Italian seasonings and salt; continue sautéing until mushrooms are tender and sausage is cooked through (about 5-7 minutes).

Remove from heat; stir in pasta sauce and pasta. Spoon into a greased 13x9-inch baking dish. Bake, covered, in a preheated 350°F oven 20 minutes.

Mix mozzarella cheese, Parmesan cheese and parsley together. Remove cover and sprinkle with cheese mixture. Continue baking, uncovered, 15-20 minutes or until bubbly and cheese is melted.
