
SICILIAN SWORDFISH



INGREDIENTS
- 1/2 cup diced tomatoes with garlic & onion drained
- 1 tablespoon balsamic vinegar
- 1 tablespoon raisins
- 5 stuffed manzanilla olives sliced
- 1 teaspoon capers drained
- 1 (4-5 ounce) swordfish steak
- 2 teaspoons Culinary Circle Extra Virgin Olive Oil
DIRECTIONS
In small skillet over medium heat, combine tomatoes, vinegar, raisins, olives and capers. Bring to a boil; reduce heat and simmer 5 minutes. Transfer to a bowl; set aside.
Sprinkle fish with salt and pepper. In same skillet, heat olive oil over medium-high heat. Add fish and sear both sides (about 1 minute per side).
Pour tomato mixture over fish; reduce heat and cover. Continue cooking fish until it flakes easily with a fork (about 5 minutes).
