STEAK AU POIVRE

INGREDIENTS
  • 1 tablespoon coarsely ground black pepper
  • 2 (6 ounce) premium angus New York strip steaks
  • 1 tablespoon pure vegetable oil
  • 1/4 cup cognac
  • 1/2 cup heavy cream

DIRECTIONS

Press pepper into both sides of steaks. Heat oil in a large skillet over medium-high heat.

Add steaks to skillet; sear steaks about 5-6 minutes per side or until desired doneness is reached (145°F for medium-rare; 160°F for medium). Remove from skillet and salt steaks as desired. Set aside and keep warm.

Add Cognac to skillet; whisking to scrape bits off bottom of pan. Allow to reduce by half. Add cream to pan and allow to thicken slightly, whisking constantly (about 2-3 minutes). Salt and pepper to taste. Serve steaks with sauce.
