
SWEDISH MEATBALLS



INGREDIENTS
- 5 tablespoons butter divided
- 1/2 cup chopped onion
- 1 pound ground meatloaf mixture - beef, pork
- 1 pound ground pork
- 1 cup heavy cream divided
- 3/4 cup crispy Panko style plain bread crumbs
- 2 large eggs beaten
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/4 cup all-purpose flour
- 3 cups reduced sodium beef broth
- - sea salt
- - ground black pepper
- - prepared mashed potatoes
DIRECTIONS
In small skillet, melt 1 tablespoon butter over medium heat. Add onions; saut� until softened (about 3-5 minutes). Transfer to a large bowl.
Add meat, � cup cream, bread crumbs, eggs, pepper, nutmeg and allspice; salt to taste. Mix until just combined (mixture will be soft).
Form into 1-inch meatballs; place on a greased large baking sheet. Bake in a preheated 375�F oven until cooked through (about 15 minutes).
Meanwhile, in a large saucepan, melt remaining � cup butter over medium heat. Whisk in flour; cook, whisking 1 minute. Whisk in beef stock; bring to a boil, whisking constantly. Boil 1 minute; reduce heat and whisk in remaining � cup whipping cream. Salt and pepper to taste.
Add meatballs to sauce; simmer, stirring occasionally, 15-20 minutes or until desired consistency is reached. Serve with mashed potatoes.
