BEEF & BEAN BURRITOS

INGREDIENTS
  • 1 cup instant brown rice
  • 1 pound lean ground beef
  • 1 15 ounce can pinto beans rinsed and drained
  • 1 10.75 ounce can condensed tomato soup
  • 1/2 cup sour cream
  • 1 1.25 ounce packet taco seasoning mix
  • 6 10-inch flour tortillas
  • 1 1/2 cups shredded mild Cheddar cheese

DIRECTIONS

Prepare rice according to package directions. Meanwhile, in large skillet over medium heat, cook and crumble beef until no longer pink; drain fat.

Add cooked rice, beans, soup, sour cream and taco seasoning to skillet; bring to a simmer, stirring occasionally.

Divide among tortillas. Top with cheese; roll up burrito style.
