BACON & CHEESE MEATLOAF

INGREDIENTS
  • 1 sleeve saltine crackers crushed
  • 1 cup 2% reduced fat milk
  • 1 pound grass fed organic 85% ground beef
  • 1 pound 80% ground pork
  • 2 cups shredded mild Cheddar cheese
  • 1/2 cup chopped onion
  • 2 large eggs beaten
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 9 slices bacon
  • - kosher salt
  • - ground black pepper

DIRECTIONS

In large mixing bowl, combine crackers and milk; let stand 5 minutes.

Add meat, cheese, onions, eggs, Worcestershire sauce and garlic powder; salt and pepper to taste. Gently mix until just combined; do not over mix.

Transfer to a greased 13x9-inch baking dish and form into a 10x4-inch loaf. Layer bacon, overlapping slices, diagonally across meatloaf; tuck edges under meatloaf.

Bake in a preheated 425?F oven 50-55 minutes or until internal temperature reaches 160?F. Let stand 10 minutes before serving.
