SOUTHWESTERN TACOS

INGREDIENTS
  • 1 pound lean ground beef
  • 1 15 ounce can black beans rinsed and drained
  • 1 cup whole kernel corn
  • 1 cup medium thick and chunky salsa
  • 1 1.25 ounce packet taco seasoning mix
  • 1/4 cup diced green chiles
  • 1/4 cup chopped fresh cilantro
  • 1 8.45 ounce package jumbo white corn taco shells
  • - shredded Colby jack cheese, shredded lettuce, diced tomatoes, sour cream

DIRECTIONS

In large skillet over medium heat, cook and crumble beef until no longer pink; drain off fat.

Add beans, corn, salsa, taco seasoning, green chiles and cilantro. Cook until heated through (about 5 minutes).

Divide mixture among taco shells; top with cheese, lettuce, tomatoes and sour cream.
