
COCONUT CHERRY CRUMBLE



INGREDIENTS
- 3 10 ounce packages organic frozen dark sweet cherries thawed and drained
- 2/3 cup + 5 tablespoons organic raw cane sugar divided
- 10 3/4 tablespoons organic coconut flour divided
- 3/4 cup organic unsweetened coconut flakes
- 1/2 cup organic butter melted
- 1/2 teaspoon sea salt
DIRECTIONS
In medium bowl, combine cherries, 5 tablespoons sugar and 4½ tablespoons coconut flour; toss until well combined. Transfer to a greased 9-inch cast iron skillet.
In another bowl, combine remaining 2/3 cup sugar, 6¼ tablespoons flour, coconut, butter and salt; sprinkle over cherries.
Bake in a preheated 350°F oven 40 minutes or until golden brown and bubbly. Remove from oven; let cool slightly (will thicken upon sitting).
