CHOCOLATE CHIP CHEESECAKE

INGREDIENTS
  • 1 8 ounce package organic chocolate chip bite size cookies crushed
  • 1/4 cup organic butter melted
  • 1 1/2 8 ounce packages organic cream cheese softened
  • 1 14 ounce can organic sweetened condensed milk
  • 1 organic large brown egg
  • 1/2 cup organic semi-sweet chocolate chips

DIRECTIONS

In medium bowl, combine crushed cookies and melted butter; transfer to a 9-inch pie plate and press into bottom and up sides. Set aside.

In large mixing bowl, combine softened cream cheese and condensed milk; using an electric mixer, beat on high until light and fluffy. Add egg and continue beating until just combined (do not over beat).

Fold in chocolate chips; pour into pie crust. Bake in a preheated 325°F oven 25 minutes or until edges are set but center is still slightly wobbly.

Remove from oven; cool completely on cooling rack. Cover and refrigerate several hours before serving.
