CHERRY ALMOND COFFEE CAKE

INGREDIENTS
  • 1/2 cup + 2 tablespoons organic light brown sugar divided
  • 1 tablespoon organic ground Saigon cinnamon
  • 1 15-18 ounce package vanilla cake mix
  • 1 1/2 cups organic frozen dark sweet cherries chopped
  • 1 1/2 cups cherry vanilla granola
  • 1/3 cup sliced whole natural almonds

DIRECTIONS

In small bowl, combine ½ cup sugar, cinnamon and 1 tablespoon water; mix to combined. Set aside.

Prepare cake mix according to package directions; Dollop batter with cinnamon mixture and gently fold into batter.

Transfer to a greased 13x9-inch baking pan. Top with cherries. In medium bowl, combine granola, almonds and remaining 2 tablespoons sugar; sprinkle over cherries.

Bake in a preheated 350°F oven 35-45 minutes or until knife inserted into center of cake comes out clean. Remove from oven; cool.
