
SIMPLE STRAWBERRY CHEESECAKE



INGREDIENTS
- 1 cup finely ground low fat honey graham crackers
- 3/4 cup granulated sugar divided
- 1/4 cup butter melted
- 2 8 ounce packages Neufchatel cheese softened
- 1 8 ounce container frozen lite whipped topping thawed
- 1/4 cup strawberry preserves
- 1 16 ounce container fresh strawberries sliced
DIRECTIONS
In medium mixing bowl, combine finely ground crackers, ¼ cup sugar and melted butter; mix until well combined. Press into a 9-inch pie plate. Bake in a preheated 375°F oven 6-8 minutes. Cool.
Meanwhile, in large mixing bowl, combine Neufchâtel and remaining ½ cup sugar. Using an electric mixer, beat on medium speed until smooth. Add whipped topping and continue mixing until light and fluffy.
Add preserves; mix on low until just swirled into mixture. Transfer to cool pie crust. Refrigerated until set (2-3 hours). Top with sliced strawberries just before serving. Serve with whipped cream, if desired.
