TURKEY SAUSAGE BREAKFAST PIE

INGREDIENTS
  • 8 ounces bulk lean turkey breakfast sausage
  • 1/2 cup sliced leeks
  • 1/2 cup chopped red bell pepper
  • 2 cups chopped organic baby spinach
  • 1 cup organic shredded mild Cheddar cheese
  • 5 organic large brown eggs
  • 1 1/2 cups organic 1% low fat milk
  • 3/4 cup organic buttermilk pancake mix

DIRECTIONS

In large skillet over medium-high heat, combine turkey, leeks and peppers; salt and pepper to taste. Cook and crumble until sausage is no longer pink.

Add spinach; continue cooking until all liquid is absorbed. Transfer mixture to a greased 9-inch deep dish pie plate and top with cheese. Place on a baking sheet.

In large bowl, combine eggs, milk and pancake mix; pepper to taste. Whisk until well combined; pour over turkey mixture.

Bake in a preheated 350°F oven 35-40 minutes or until knife inserted in center comes out clean.
