
CHERRY SURPRISE CAKE



INGREDIENTS
- 1 1/3 cups granulated sugar divided
- 3/4 cup pure vegetable oil
- 4 large eggs
- 1/4 cup water
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 20 ounce can cherry pie filling
- 1 teaspoon ground cinnamon
DIRECTIONS
In large mixing bowl, combine 1 cup sugar and oil; using an electric mixer on medium speed, beat until well combined.
Beat in eggs one at a time; add in water and vanilla, beating until creamy. Gradually add in flour and baking powder.
Pour ½ of the batter into the bottom of a greased 9x13-inch baking pan. Spread pie filling over batter; dot with remaining batter.
Combine remaining 1/3 cup sugar and cinnamon; sprinkle over the top of the batter. Bake in a preheated 325°F oven until knife inserted in center of cake comes out clean (about 50 minutes).
