
ZUCCHINI PANCAKES



INGREDIENTS
- 2 cups shredded zucchini
- 1/2 cup complete pancake & waffle mix
- 1/2 cup Culinary Circle Grated Parmesan Cheese
- 1/4 cup minced onion
- 2 large eggs beaten
- - pure vegetable oil
DIRECTIONS
In large mixing bowl, combine zucchini, pancake mix, Parmesan cheese, onion and eggs; salt and pepper to taste. Mix until well combined.
Heat skillet over medium heat; lightly coat with oil. Add about ΒΌ cup batter onto skillet, repeat to fill skillet.
Cook 2-3 minutes per side or until golden brown.
