SPINACH & GOAT CHEESE TOAST

with a Poached Egg

INGREDIENTS
  • 1 tablespoon white vinegar
  • - cooking spray
  • 2 tablespoons minced onion
  • 1/2 teaspoon minced garlic
  • 2 cups chopped fresh spinach leaves
  • - pinch cayenne pepper
  • 1 tablespoon half & half
  • 1 slice multigrain wide pan bread
  • 1 tablespoon Culinary Circle Soft Goat Cheese
  • 1 large egg

DIRECTIONS

Fill a small saucepan with hot water 2-inches deep; add vinegar. Bring to a simmer.

Meanwhile, lightly spray medium skillet with cooking spray; heat over medium-high heat. When hot, add onion and garlic; salt and pepper to taste. Sauté until onions are softened. Add in spinach and cayenne; continue sautéing until spinach is wilted. Stir in half & half. Remove from heat; set aside.

Break egg into a small dish; gently transfer egg into simmering water from dish. Cook 3-4 minutes or until desired doneness. Remove with slotted spoon; drain well.

Meanwhile, toast bread to desired doneness; spread with goat cheese. Top with spinach and poached egg.
