SAUSAGE & CHEESY POTATOES

with Baked Eggs

INGREDIENTS
  • 1 4.5 ounce package julienne potatoes
  • 1/2 16 ounce chub mild pork sausage thawed
  • 1/2 cup chopped onion
  • 1/2 teaspoon ground black pepper
  • 4 large eggs
  • 1/2 cup shredded mild Cheddar cheese
  • 1/4 cup Culinary Circle Grated Parmesan Cheese
  • 1/2 teaspoon chopped fresh oregano leaves
  • 1/2 teaspoon chopped fresh thyme

DIRECTIONS

Prepare potatoes according to stovetop package directions. Meanwhile, in large skillet, cook and crumble sausage and onions until sausage is no longer pink (about 8-10 minutes); drain.

Add sausage and black pepper to potatoes; spread evenly in the bottom of a greased 9x9 inch baking dish; let stand 5 minutes to thicken.

Make 4 deep wells in the potatoes; crack one egg directly into each well and sprinkle with Cheddar cheese. Bake in a preheated 450ºF oven for 20 minutes or until desired doneness of eggs is reached.

Remove from oven, garnish with Parmesan cheese and fresh herbs. Serve immediately.
