CHEESY POTATO BRUNCH BAKE

INGREDIENTS
  • 1 16 ounce chub mild pork sausage thawed
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped onion
  • 2 4.5 ounce packages julienne potatoes
  • 4 cups warm water
  • 1 cup 2% milk
  • 8 large eggs
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded mild Cheddar cheese

DIRECTIONS

In large skillet over medium heat, cook and crumble sausage, peppers and onions until sausage is no longer pink; drain. Set aside.

In large mixing bowl, combine warm water, milk, eggs, cheese packets from potatoes and black pepper. Whisk until well combined. Stir in potatoes and sausage.

Transfer to a greased 13x9-inch baking dish. Bake in a preheated 375°F oven 40 minutes. Top with cheese and continue baking 5 minutes or until knife inserted in center comes out clean.
