BREAKFAST BURRITO II

INGREDIENTS
  • - cooking spray
  • 1/2 cup pinto beans rinsed and drained
  • 1/4 cup chopped green and/or red bell peppers
  • 2 tablespoons chopped onion
  • 1/4 teaspoon ground cumin
  • 1 cup Amazing Egg® whites
  • 1/4 cup shredded mild Cheddar cheese
  • 1/2 ripe avocado pitted, peeled and diced
  • 2 large whole wheat tortillas warmed

DIRECTIONS

Spray a large nonstick skillet with cooking spray; heat over medium-high heat. Add beans, peppers, onions and cumin; salt and pepper to taste. Sauté until peppers are softened (about 2-3 minutes).

Pour egg whites into skillet. Allow eggs to begin setting; slowly pull spatula across egg mixture, allowing uncooked eggs to run under cooked eggs. Continue until eggs are set.

Remove from heat; stir in cheese and avocado. Divide mixture among tortillas; fold up burrito style.
