BACON & SWISS MINI QUICHES

INGREDIENTS
  • 1 16 ounce package bacon diced
  • 1 cup chopped onion
  • 1 3/4 cups milk
  • 3/4 cup complete pancake & waffle mix
  • 5 large eggs beaten
  • 1 1/2 cups shredded Swiss cheese

DIRECTIONS

In large skillet over medium heat, cook bacon until crisp; add onions about half way through. Drain off bacon drippings.

In large bowl, combine milk, pancake mix and eggs; salt and pepper to taste. Set aside.

Divide bacon and cheese among 1 greased (12 count) muffin pan. Fill with pancake mixture.

Bake in a preheated 350°F oven 25 minutes or until knife inserted in center comes out clean.
