BLUEBERRY FLAX MUFFINS

Serves : 12 muffins

INGREDIENTS
  • 1 1/2 cups unbleached all-purpose flour
  • 1 cup blueberry flax granola
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon freshly ground sea salt
  • 1/2 cup blended vanilla lowfat yogurt
  • 1/2 cup organic wildflower honey
  • 1/4 cup extra light tasting olive oil
  • 2 organic large brown eggs
  • 1 teaspoon lemon zest
  • 1 10 ounce package organic frozen wild blueberries thawed

DIRECTIONS

In medium bowl, combine flour, cereal, baking powder, baking soda and salt; set aside.

In large mixing bowl, whisk together yogurt, honey, oil, eggs and lemon zest. Mix in flour mixture until just combined, do not over mix. Fold in blueberries.

Divide batter into 12 lined or greased muffin cups. Bake in a preheated 350°F oven 16-18 minutes or until knife inserted in center comes out clean.
