
SESAME GINGER BEEF BITES
with Asian Slaw



INGREDIENTS
- 1 pound premium angus boneless sirloin steak
- 1/2 cup + 2 tablespoons sesame ginger marinade
- 24 pot sticker wrappers
- 1 cup finely shredded Napa cabbage
- 1/2 cup julienne carrots
- 1/2 cup diced cucumber
- 1/4 cup wasabi peas smashed
DIRECTIONS
Trim fat from steak; cut into ¼ -inch cubes. Place steak and ½ cup marinade in a 1-gallon recloseable food storage bag; seal. Toss to coat. Marinate 30 minutes or up to overnight.
Meanwhile, generously spray 2 (24 count) mini muffin pans with cooking spray. Press pot sticker wrappers into every other muffin cup, creating small round cups. Generously spray wrappers with cooking spray. Bake in a preheated 400°F oven 6-8 minutes or until golden brown. Remove to cooling rack. (If you only have 1 mini muffin pan, pot sticker cups can be baked in 2 batches).
In small bowl, combine cabbage, carrots, cucumber and remaining 2 tablespoons marinade; toss to coat. Set aside.
Heat large skillet over high heat. When hot, add beef; discard bag with marinade. Stir-fry until browned and cooked through (about 5-6 minutes); drain off juices.
Divide beef among pot sticker cups; top with slaw and sprinkle with wasabi peas.
