REFRIED BLACK BEANS

INGREDIENTS
  • 1 16 ounce package organic dried black beans soaked, rinsed and drained
  • 3/4 cup water
  • 3 tablespoons organic extra virgin olive oil
  • 1 cup finely chopped yellow onions
  • 1/4 cup jarred sliced jalapeños diced
  • 1 1/2 tablespoons organic ground cumin
  • 2 teaspoons freshly ground natural sea salt

DIRECTIONS

Prepare black beans according to package directions; cool.

Purée cooked beans and water in a food processor or blender; set aside.

In large skillet, heat oil over medium heat. Add onions and sauté until slightly golden (about 5-7 minutes). Stir in puréed beans, jalapeños, cumin and salt. Continue cooking 10 minutes or until liquid is evaporated and beans are smooth.
