RED SKIN GARLIC MASHED POTATOES

INGREDIENTS
  • 3 pounds organic baby red potatoes skin-on, quartered
  • 15 garlic cloves peeled
  • 1 32 ounce container organic low sodium chicken broth
  • 3/4 cup organic original soymilk warmed
  • 1/4 cup organic butter melted

DIRECTIONS

Place potatoes, garlic and chicken broth in large saucepan. Add enough water to cover potatoes.

Bring to a boil over high heat; reduce heat and simmer until potatoes are tender (about 20 minutes). Drain.

Add milk and butter; mash to desired consistency. Salt and pepper to taste.
