
VEGETABLE BHIRYANI
(Indian Fried Rice)



INGREDIENTS
- 1 cup organic Indian basmati brown rice
- 2 cups water
- 2 tablespoons organic extra virgin olive oil
- 1 cup thinly sliced onion
- 1 teaspoon minced garlic
- 1 cup peeled and cubed organic russet potatoes
- 1 14.5 ounce can organic diced tomatoes undrained
- 1/3 cup organic frozen green peas
- 2 1/2 teaspoons Garam Masala spice blend
- 1 1/2 teaspoons freshly ground natural sea salt
- 1/4 cup chopped organic fresh cilantro
DIRECTIONS
Prepare rice according to package directions, cooking for 15 minutes.
Meanwhile, heat oil in a medium saucepan. Add onions and garlic. Sauté 1 minute. Add potatoes; fry for 2 minutes, stirring occasionally.
Add tomatoes and peas, cover and cook for 5 minutes. Add Garam Masala and salt.
Stir in partially cooked rice and water. Bring to a boil. Reduce heat and cover. Continue cooking 20-25 minutes or until rice and potatoes are soft. Stir in cilantro.
