SOUTHWEST RANCH CHICKEN PASTA

INGREDIENTS
  • 1 7.5 ounce package ranch & bacon pasta salad mix
  • 1 tablespoon 100% pure olive oil
  • 1 pound boneless, skinless chicken breasts cubed
  • 1 1.25 ounce packet taco seasoning mix
  • 1 14 ounce package frozen three pepper blend
  • 1 15.25 ounce can whole kernel corn drained
  • 1-2 tablespoons diced jalapeño peppers optional

DIRECTIONS

Prepare pasta salad according to package directions using large serving bowl; set aside.

In large skillet, heat oil over medium-high heat; add chicken and taco seasoning. Sauté until cooked through and no longer pink (about 6-8 minutes). Add vegetables, corn and jalapeños; continue cooking until vegetables are heated through, stirring occasionally. Salt and pepper to taste.

Transfer chicken to serving bowl with pasta; toss to combine. Serve immediately or refrigerate.
