RED BEANS & RICE

with Sausage

INGREDIENTS
  • 1 tablespoon pure vegetable oil
  • 8 ounces Polska kielbasa ring sliced
  • 1 cup chopped green bell pepper
  • 1 cup chopped onion
  • 2 tablespoons chopped garlic
  • 2 teaspoons Creole seasoning
  • 1 29 ounce can dark red kidney beans undrained
  • 1 cup long grain white rice
  • 1 tablespoon Louisiana hot sauce

DIRECTIONS

In large saucepan or Dutch oven, heat oil over medium heat. Add sausage, peppers, onions, garlic and Creole seasoning; salt and pepper to taste. Sauté until onions are softened (about 3-5 minutes).

Add undrained beans, rice, hot sauce and 2 cups water; bring to a boil.

Reduce heat; simmer, covered, 20 minutes or until rice is tender, stirring occasionally.
