
QUICK & EASY GNOCCHI



INGREDIENTS
- 2 cups instant mashed potatoes flakes
- 2 cups boiling water
- 2 large eggs beaten
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 2 1/2 cups all-purpose flour
- 1 24 ounce jar three cheese pasta sauce
- 1/2 cup half & half
DIRECTIONS
In large bowl, combine potato flakes and boiling water; stir to combine. Let cool. Add remaining ingredients to potatoes (except pasta sauce and half & half); stir until well combined.
Turn dough out onto a floured surface; knead lightly. Divide dough into 4 sections. Working in batches, roll 1 section of dough into an 18x1-inch roll. Cut into bite size pieces; roll each piece along the back side of a fork lightly pressing down on fork. Set aside. Repeat with remaining dough.
Bring a large stockpot of water to a boil. Add gnocchi, in batches, if needed. Cook until gnocchi rises to the top; remove with slotted spoon.
In large saucepan or Dutch oven over medium heat, combine pasta sauce and half & half. Cook until heated through, stirring occasionally. Add cooked gnocchi to pan; toss to coat.
