
COCONUT BASMATI RICE



INGREDIENTS
- 1 cup basmati rice
- 1 13.5 ounce can light coconut milk
- 1 tablespoon Garam Masala spice blend
- 1 teaspoon salt
- 1/2 cup dried apricots
- 1/2 cup sweetened coconut flakes toasted
- 1/2 cup cashew halves & pieces
- 1/4 cup dried currents
- 1/4 cup sliced green onions
DIRECTIONS
In medium saucepan with lid, combine rice, coconut milk, 1 cup water, Garam Masala and salt.
Cover and bring to a boil; reduce heat and simmer until liquid is absorbed, stirring occasionally (about 20 minutes).
Remove from heat; stir in apricots, toasted coconut, cashews, currents and green onions.
