CHICKEN MEATBALL & NOODLE CASSEROLE

INGREDIENTS
  • 1 pound ground chicken breast
  • 1 2.25 ounce envelope noodle soup mix
  • 1 cup sour cream divided
  • 1/2 cup toasted plain bread crumbs
  • 1 large egg beaten
  • 1/2 teaspoon dried thyme leaves
  • 1/2 16 ounce package wide egg noodles
  • 1 10.5 ounce can cream of chicken soup
  • 1/2 cup chicken broth

DIRECTIONS

In medium bowl, combine chicken, soup mix, ½ cup sour cream, bread crumbs, egg and thyme; salt and pepper to taste. Mix until well combined.

Form into meatballs and place on a greased large baking sheet; bake in a preheated 375°F oven 15 minutes. Prepare noodles according to package directions.

Meanwhile, in large bowl, combine chicken soup, remaining sour cream and chicken broth; stir in cooked noodles and meatballs.

Transfer to a greased 2-quart baking dish; return to oven and continue baking 20 minutes or until heated through.
