
CHICKEN BRUSCHETTA PASTA



INGREDIENTS
- 4 ounces spaghetti
- 1 tablespoon 100% pure olive oil
- 8 ounces boneless, skinless chicken breasts sliced
- 2 teaspoons chopped garlic
- 1 14.5 ounce can no salt added diced tomatoes with oregano, garlic & basil undrained
- 1/2 cup half & half
- 1/4 cup chopped fresh basil leaves
- 1/4 cup Culinary Circle Grated Parmesan Cheese optional
DIRECTIONS
Prepare pasta according to package directions; drain.
Meanwhile, in large skillet over medium heat, heat oil until hot. Add chicken and garlic; salt and pepper to taste. Sauté until chicken is browned (about 3-5 minutes).
Stir in undrained tomatoes. Simmer, stirring occasionally, until liquid is reduced by half and chicken is cooked through (about 3-5 minutes).
Add cooked spaghetti, half & half and basil; cook until sauce has thickened slightly. Stir in Parmesan cheese, if desired.
