
SPAGHETTI ALLA CARBONARA



INGREDIENTS
- 1 16 ounce package spaghetti pasta
- 1 tablespoon olive oil
- 1/2 pound Culinary Circle Sliced Pancetta or bacon, diced
- 1 medium onion diced
- 1 tablespoon chopped garlic
- 4 large eggs
- 1 1/3 cups Culinary Circle Shredded Three Cheese Blend
- 3/4 cup heavy cream
DIRECTIONS
Prepare pasta according to package directions; drain.
Meanwhile, in a large skillet, heat oil over medium-high heat. Sauté pancetta, onions and garlic until pancetta is crispy. Add pasta to skillet and toss to coat with pancetta mixture, reduce heat to low.
In a medium bowl, whisk eggs, cheese and cream together; salt and pepper to taste.
Add egg mixture to pasta and toss to coat. Allow to cook over low heat, stirring until sauce thickens, being careful not to scramble the eggs. Garnish with chopped parsley and additional cheese, if desired. Serve immediately.
