CAJUN FETTUCCINE ALFREDO

INGREDIENTS
  • 8 ounces fettuccine pasta
  • 1 tablespoon olive oil
  • 8 ounces smoked Andouille sausage links, sliced
  • 1/2 cup sliced onion
  • 1/2 cup sliced red bell peppers
  • 1/2 cup sliced green bell peppers
  • 12 ounces uncooked shrimp peeled and devined
  • 1-2 tablespoons Cajun seasoning
  • 1 16.4 ounce jar classic Alfredo pasta sauce
  • 1 medium tomato seeded and diced
  • 1/2 cup Culinary Circle Shredded Parmesan Cheese

DIRECTIONS

Prepare pasta according to package directions; drain.

Meanwhile, in large skillet, heat oil over medium-high heat. Add sausage, onions and peppers; sauté until onions are softened (about 5 minutes).

Add in shrimp and Cajun seasoning. Sauté until shrimp is opaque. Add in Alfredo sauce and simmer until heated through.

Toss with pasta, tomatoes and Parmesan cheese.
