
SHRIMP ALFREDO II



INGREDIENTS
- 2 tablespoons butter
- 1/4 cup diced yellow onion
- 4 cups heavy whipping cream
- 1/4 cup freshly grated Parmesan cheese divided
- 3/4 teaspoon freshly ground nutmeg
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 16 ounce package linguine
- 1 1/2 pounds frozen 41-50 count peeled & deveined tail-on cooked shrimp thawed, tails removed
DIRECTIONS
In a large saucepan, melt butter over medium heat. Add onions and sauté until softened (about 3-5 minutes).
Stir in whipping cream, 2 tablespoons cheese, nutmeg, salt and pepper. Bring to a boil; reduce heat and simmer 25-30 minutes, stirring frequently.
Meanwhile, cook pasta according to package directions.
Stir in shrimp and continue simmering until heated through and sauce is thickened (about 5-10 minutes).
Toss pasta with sauce and shrimp. Sprinkle with remaining cheese and fresh cracked pepper, if desired.
