RUM KISSED GRILLED SHRIMP

with Papaya Salsa

INGREDIENTS
  • 6 tablespoons fresh squeezed lime juice divided
  • 1/4 cup spiced rum
  • 2 tablespoons honey
  • 1 tablespoon minced garlic
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1 pound frozen 16-20 count EZ peel uncooked shrimp thawed, peeled and deveined
  • 1 cup diced papaya
  • 1 cup diced pineapple
  • 1/2 cup diced red onion
  • 2 tablespoons chopped fresh cilantro

DIRECTIONS

In small bowl, combine ΒΌ cup lime juice, rum, honey, garlic, cumin, salt and cayenne. Place shrimp in a small bowl, pour marinade over shrimp. Toss to coat; refrigerate, tossing occasionally, a minimum of 30 minutes.

In medium bowl, combine papaya, pineapple, red onion, cilantro and remaining 2 tablespoons lime juice. Toss to coat; refrigerate, covered, until ready to serve.

Meanwhile, prepare grill to medium heat. Place shrimp on grill, grill until opaque (about 8-10 minutes), turning over occasionally. Serve shrimp with Papaya Salsa.
