
SHRIMP STUFFED FISH



INGREDIENTS
- 8 frozen 41-50 count EZ peel uncooked shrimp thawed, peeled
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped shallots
- 2 tablespoons lemon juice
- 1 tablespoon white wine
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- - dash Old Bay® seasoning
- 5 tablespoons toasted plain bread crumbs divided
- 1/2-3/4 pound fresh sole, flounder or orange roughy fillets
- 2 tablespoons butter melted
DIRECTIONS
In food processor or blender, process raw shrimp, parsley, shallots, lemon juice, wine, salt, pepper and Old Bay seasoning until shrimp is chopped into small pieces. Transfer to small bowl; stir in 3 tablespoons bread crumbs.
Pat fish dry clean paper towels; place in a greased 8x8-inch baking dish. Spoon stuffing mixture over fish.
In small bowl, combine remaining 2 tablespoons bread crumbs with butter and a dash of Old Bay seasoning. Sprinkle over stuffing.
Bake in a preheated 350°F oven 20-25 minutes or until fish flakes easily with a fork and stuffing is cooked through.
