CAJUN BITES

with Horseradish Dipping Sauce

INGREDIENTS
  • 1/2 cup sour cream
  • 1/4 cup light mayonnaise
  • 1/4 cup refrigerated prepared horseradish
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon chopped garlic
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon dried thyme leaves
  • 1 pound premium angus whole beef tenderloin cut into 24 cubes
  • 8 bamboo skewers cut in half, soaked in water 30 minutes

DIRECTIONS

In medium bowl, combine sour cream, mayonnaise, horseradish, chives and garlic; salt and pepper to taste. Set aside.

Prepare grill to medium heat. Combine garlic powder, salt, pepper, onion powder, cayenne, oregano and thyme in medium bowl. Toss tenderloin cubes with seasoning. Place 3 cubes on each half skewer.

Place skewers on grill. Grill, turning occasionally, 5-7 minutes or until desired doneness is reached (145°F for medium-rare; 160°F for medium).

Remove from grill and place on platter. Serve with horseradish sauce.
