TOASTED RAVIOLI

with Mushroom & Fired Roasted Tomato Sauce

Serves : 3-4 servings

INGREDIENTS
  • 1 13.1 ounce package frozen toasted ravioli
  • 1 tablespoon 100% pure olive oil
  • 1 8 ounce package sliced baby bella mushrooms
  • 1/4 cup chopped onion
  • 1 tablespoon chopped garlic
  • 1 14.5 ounce can fire roasted diced tomatoes drained
  • 1 cup half & half

DIRECTIONS

Prepare ravioli according to package directions.

Meanwhile, in large skillet, heat oil over medium-high heat. Add mushrooms, onions and garlic; salt and pepper to taste. Sauté until mushrooms are softened and slightly browned (about 3-5 minutes).

Stir in tomatoes and half & half; bring to a boil. Reduce heat and simmer until sauce thickens slightly, stirring occasionally (about 3-5 minutes). Serve with ravioli.
