SPINACH SALAD

with Balsamic Citrus Vinaigrette

INGREDIENTS
  • 1/4 cup fresh squeezed tangelo or orange juice
  • 1 1/2 teaspoons Dijon mustard
  • 1 1/2 teaspoons balsamic vinegar
  • 1 1/2 teaspoons honey
  • 8 ounces fresh spinach leaves
  • 2 tangelos or oranges sectioned
  • 1/2 cup crumbled reduced fat blue cheese
  • 1/4 cup thinly sliced shallots
  • 1/4 cup sliced almonds

DIRECTIONS

In small bowl, whisk together tangelo juice, mustard, vinegar and honey; salt and pepper to taste.

In large bowl, combine spinach, tangelo sections, blue cheese, shallots and almonds.

Toss salad with vinaigrette; serve immediately.
