
ROASTED BEET SALAD



INGREDIENTS
- 1/4 cup balsamic vinegar
- 1/4 cup orange juice
- 1 teaspoon orange zest
- 1 teaspoon light brown sugar
- 1 15 ounce can no salt added sliced beets drained
- 3 cups baby arugula leaves
- 1/2 cup Culinary Circle Blue Cheese Crumbles
DIRECTIONS
In small bowl, combine vinegar, orange juice, zest and brown sugar. Toss beets with half the dressing and place on medium baking sheet.
Bake in a preheated 400°F oven 15 minutes or until tops begin to brown.
Meanwhile, combine remaining dressing with arugula and blue cheese. Add roasted beets and toss to coat; serve immediately.
