QUINOA SALAD

with Fresh Snap Peas & Carrots

Serves : 11 (1/2 cup) servings

INGREDIENTS
  • 1 cup red quinoa
  • 1 medium carrot
  • 1 cup fresh sugar snap peas diagonally sliced
  • 1/2 cup organic fresh Italian parsley chopped
  • 1/2 cup organic fresh mint chopped
  • 1/3 cup red onion sliced
  • 1/3 cup light balsamic vinaigrette dressing
  • 1/3 cup feta cheese crumbles optional
  • - sea salt
  • - ground black pepper

DIRECTIONS

Prepare quinoa according to package directions; cool completely.

Using a vegetable peeler remove outside layer of carrot. Continue to peel entire carrot, creating short carrot curls; cut longer curls into bite size pieces.

In large bowl, combine cooled quinoa with carrot curls, snap peas, parsley, mint, onions, and vinaigrette. Salt and pepper to taste. Toss to coat. Gently stir in feta cheese (if desired).
