
CORN, TOMATO & AVOCADO COUSCOUS SALAD



INGREDIENTS
- 1 10 ounce package plain couscous
- 1/3 cup fresh squeezed lime juice (about 2 limes), divided
- 3 teaspoons lime zest divided
- 1 teaspoon ground cumin
- 1 cup frozen super sweet corn thawed and drained
- 1 ripe avocado pitted, peeled and chopped
- 1/2 pint grape tomatoes cut in half
- 1/2 cup cooked and crumbled bacon
- 1/2 cup feta cheese crumbles
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro
DIRECTIONS
Prepare couscous according to package directions replacing ¼ cup water with ¼ cup lime juice, 2 teaspoons lime zest and cumin. Fluff with fork and cool completely.
In large bowl, combine cooled couscous with remaining ingredients, remaining lime juice and remaining lime zest.
Toss; salt and pepper to taste.
