CORN, TOMATO & AVOCADO COUSCOUS SALAD

Serves : 8 (1 cup) servings

INGREDIENTS
  • 1 10 ounce package plain couscous
  • 1/3 cup fresh squeezed lime juice (about 2 limes), divided
  • 3 teaspoons lime zest divided
  • 1 teaspoon ground cumin
  • 1 cup frozen super sweet corn thawed and drained
  • 1 ripe avocado pitted, peeled and chopped
  • 1/2 pint grape tomatoes cut in half
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup feta cheese crumbles
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro

DIRECTIONS

Prepare couscous according to package directions replacing ¼ cup water with ¼ cup lime juice, 2 teaspoons lime zest and cumin. Fluff with fork and cool completely.

In large bowl, combine cooled couscous with remaining ingredients, remaining lime juice and remaining lime zest.

Toss; salt and pepper to taste.
