WILD RICE BURGERS

INGREDIENTS
  • 3 cups vegetable broth
  • 1 cup cultivated wild rice
  • 3 tablespoons 100% pure olive oil divided
  • 1/2 cup minced onion
  • 1 fresh jalapeño pepper seeded and minced
  • 1 tablespoon chopped garlic
  • 3 large eggs beaten
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon smoked paprika
  • 1 cup shredded sharp Cheddar cheese
  • 1 cup crispy Panko style plain bread crumbs
  • 8 deli style sharp Cheddar cheese slices
  • 8 hamburger buns
  • - real mayonnaise
  • - Dijon mustard
  • - lettuce, tomato slices, onion slices

DIRECTIONS

In medium saucepan, prepare wild rice according to package directions using vegetable broth; cool rice.

Meanwhile, in a medium skillet, heat 1 tablespoon oil over medium heat. Add onions, jalapeño and garlic; salt and pepper to taste. Sauté until onions are softened; set aside.

In large bowl, combine eggs, curry powder, smoked paprika and 1 tablespoon oil; salt and pepper to taste. Fold in the shredded cheese, cooled rice, onion mixture and bread crumbs. Form into 8 patties (patties will be delicate); gently set aside.

In large skillet, heat remaining oil over medium-high heat. Carefully add burgers and cook 3 minutes; gently turn over. Top with cheese slices and cover skillet; continue cooking 3 minutes.

Spread toasted buns with mayonnaise and mustard; top with tomatoes, onions, lettuce and burgers.
