CHICKEN & PEACH SALAD PITAS

Serves : 4 servings

INGREDIENTS
  • 1/4 cup light mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh tarragon
  • 1 15 ounce can no sugar added peach slices drained and chopped
  • 2 cups chopped cooked chicken breast
  • 1 cup chopped celery
  • 1/2 cup chopped red onion
  • 1/2 cup walnut pieces toasted
  • 4 whole wheat pita pockets

DIRECTIONS

In large bowl, combine mayonnaise, mustard and tarragon; salt and pepper to taste.

Add remaining ingredients; toss to coat.

Serve in pita pockets with lettuce and tomato, if desired.
