CHEESY SALSA POTATOES

INGREDIENTS
  • 1 16 ounce chub hot pork sausage thawed
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped onion
  • 1 4 ounce can diced green chiles undrained
  • 2 4.7 ounce packages scalloped potatoes
  • 4 cups warm water
  • 1 cup 2% milk
  • 1 cup hot salsa
  • 1/2 cup sour cream
  • 1 cup Mexican style four cheese blend

DIRECTIONS

In large skillet over medium heat, cook and crumble sausage, peppers, onions and chiles until sausage is no longer pink; drain. Set aside.

In large mixing bowl, combine warm water, milk, salsa, sour cream and cheese packets from potatoes. Whisk until well combined. Stir in potatoes and sausage.

Transfer to a greased 13x9-inch baking dish. Bake in a preheated 375°F oven 40 minutes. Top with cheese and continue baking 5 minutes until cheese is melted and golden brown.
